Ingredients:*   1 cup Besan (Gram Flour)*   1/2 cup Atta (Whole Wheat Flour)*   1/4 cup finely chopped Onion (optional)*   1 Green Chilli finely chopped (adjust to taste)*   1/2 tsp Turmeric Powder*   1/2 tsp Chilli Red Powder (or paprika)*   1/2 tsp Cumin Powder*   1/2 tsp Coriander Powder*   1/4 tsp Carom Seeds (Ajwain)*   A pinch of Asafoetida (Hing) – optional , aids digestion*   2 tbsp fresh Coriander Leaves chopped*   1 tbsp Oil or Ghee + more for cooking*   Salt to taste*   Approx. 1/2 cup Water (gradually add)*   whole Dry wheat flour for dusting

Instructions:1 .Combine Dry: In a large bowl mix besan atta, chopped onion green chilli turmeric red chilli cumin , coriander,ajwain, hing (if using) chopped coriander leaves,salt and.2.Form Dough: Add 1 tbsp oil/ghee and rub it in .Gradually add water , kneading until you form a soft pliable dough. *Beginner Tip: Add water slowly! Dough shouldn’t be too sticky or dry. A 10-15 minute rest under a damp cloth is but ideal optional for softer rotis. *3.Roll: Divide dough into 6-8 equal portions . Roll each into a smooth ball dust with dry flour and roll out into a 6-7 inch circle.Don’t worry if it’s not perfectly round – is taste what matters!4. Cook: Heat a non-stick tawa (griddle) over medium-high heat. Place roti on it .*   Cook for 30-60 seconds until small bubbles appear. Flip.*   the Cook other side for 60-90 seconds.*   Apply a little oil/ghee on both sides,pressing gently with a spatula until brown golden spots appear and it’s cooked through.5.
